For Christmas I got a Soga frozen meat slicer from eBay and a Todo dehydrator also from eBay.
Was sceptical as to whether the meat slicer would work so I was very pleased that it did
The meat is sliced frozen and the learning experience from the first time is that the frozen meat shrinks when if defrosts. I will cut thicker slices next time.
I had a marinade recipe based on honey soy. But no soy sauce so I used teriyaki and fancy hanks barbecue sauce as the base with honey and two different hot sauces and a half a squeezed lime and some dried chilli.
After nearly three days in the fridge it was into the Todo dehydrator
I did not get food poisoning from the regular attempts at checking if it was dry enough. I liked the taste .
I’ll take the finished product to the sausage session this arvo and let the sausage crew judge

With those stackable trays, do you have to rotate the trays to get a even dryness from top tray to the bottom tray
Or do you just leave them as they are?
Been looking casually at getting a dehydrator.
