Forgot to mention, I am using red gum wood and saw dust for the flavour and its easily procured out this way. gunna be fun experimenting with all the different wood types I can get around here, lots of fruit woods, plus natives like red gum, red box and different mallee varieties Anyone know if you can use citrus wood for smoking, or will it be too oily for using ??

Hour and half since going in and they are progressing nicely, but I do have to figure out some way of regulating my heat better.
