Would have to check with Ruce but why wouldn't you be able to leave it for 3 months if the rite plants were used?

I wouldn't leave it unattended or unchecked most days. The plants are ok but grow fast depending what it is. The concern is the fish. If your water or air pump stops you can have a big problem very quickly if you have a heavily stocked tank. Like most livestock farming the heavier the stocking rate the quicker problems occur.
We have five of those square tank tops for beds, one tank in the ground for a sump and a 2000l concrete water trough for the pond. When we had 60 perch at about 200- 400gm you didn't want a power failure, within 15 minutes in summer they were sucking air from the surface if the pumps stopped. I setup a UPS to run the air pump if the power went out and if a long outage used a generator.
But you can manage the issue if you time things right. Currently not doing much with ours so have only 10 big silver perch growing, not many vegies, a rose bush and have put some blueberries in one bed to try. The bare gravel beds still do a good job cleaning the water.
It can be a very productive way to grow things, scale it to what you can use. You can only eat so many lettuce :D .
Plenty of info on line or fire the questions here to discuss.
