beef is shit compared to pork ribs.

All pork. Ribs cook for 5 hrs, the shoulders get 8hrs. Cooking temp is about 100-120 degrees. Nice and slow. It does wonderful things to meat. Havent done a set of beef ribs yet, I prefer them with a wet style bbq sauce. Not to say I wont be trying them.
