Surely the business name should be RTRAF - rougher than RAF productions!
They do not store well after the pack is opened, absorbing moisture and corroding between the flux and filler resulting in an arc that will walk from one side of the rod to the other. If you can keep them dry you should be fine.

I keep my welding rods in a 100mm PVC tube - glue on cap on one end, screw on cap on the other. They keep for years.

That worked for some old rods I had a decade or so ago.
Guess you will be using a simple removable hook that hangs off the side bars. It should work OK although it will probably be easier to throw any big buck straight in the tray than lift them high enough to hang on the rail.

Yes to S hooks.
Nope far easier to leg hand a boomer than pick him up to tray height. Use his balls as an extra hand hold and it an easy straight lift. Did thousands as a Pro Roo shooter, never worried about the winch.
Should have seen us with the last sambar, decided to hag him whole in the cool room.
Drove the ute up to it, field dressed and didn't have to much trouble loading it, trying to hang it in the cool room was a different story. Lifting him clear of the ground was a effort but achievable between two of us but lifting him high enough to get the gambrel onto a hook in the confines of the cool room required one more hand than we had available in the space.
