Google Bob Loveless 4" drop point, that's the style I use and carry the most. Second is one along the lines of the Puma hunters pal. Both good for detailing with bigger stuff in the bush, however if you are working off a hook the traditional style butchers/slaughtermans style knife is hard to beat.....my thoughts anyway.

My skinner ...use it for everthing
Cheap & keeps a good edge
